    1 Basic Cabbage Soup

    Ingredients:

    6 large green onions (1 bunch) 2 gloves of garlic, crushed 2 green peppers 1 or 2 cans of tomatoes (14.5 ounce size, diced or whole) 1 bunch celery, sliced 1/2 head cabbage, chopped 1 package dried onion soup mix 6 cups light chicken or vegetable broth Season to taste with salt, pepper, parsley,

    Preparation:

    Heat a tablespoon of olive oil in a thick based pan and add the onions and garlic, cook until soft, add the chopped cabbage and stir thoroughly and add onion soup mix, add the cans of tomato and stock, bring to the boil and simmer gently until cooked.  Check for seasoning.

    2. Spicy Cabbage Soup

    Ingredients:

    1 can beef broth 3/4 medium head cabbage, chopped 2 white onions, chopped 1 green pepper, chopped 1 mild pepperoncini, finely chopped 1/2 cup chopped celery 4 cups water l large can tomatoes, chopped, with juice 1 clove garlic, chopped 2 dashes hot sauce

    Preparation:

    In a pan heat some olive oil and cook the chopped onion, garlic, chopped peppers and celery until soft.  Add the water and beef broth, bring mixture to boil over medium-high heat; turn down to low. Cook gently until ingredients are tender, about 1 1/2 hours. Add chopped tomatoes and juice. Add more water if needed. Serves 4 to 6

    3. Original Cabbage Soup

    Ingredients:

    1 head cabbage, finely chopped 6 medium onions, chopped 6 green onions, chopped, 6 carrots, peeled and chopped 2 red peppers, diced 2 cloves of garlic, crushed 3 large tomatoes, skinned and chopped 5 stalks celery, sliced 4 oz brown rice salt and freshly-ground black pepper olive oil

    Preparation:

    Heat olive oil in a pan and add the vegetables, cook gently for a few minutes and then add enough cold water to cover. Bring the water to boil. Lower heat and then simmer uncovered for ten minutes.  Add the rice, cover, and then simmer on low heat until the vegetables and rice are soft. This should take about 15 minutes.  Season to taste.

    4. Cabbage Soup with Zucchini

    Ingredients:

    1/2 medium head of cabbage, diced 3 small zucchini,peeled and diced 1 large clove garlic, crushed 1/4 tsp dried basil 1/2 tsp black pepper salt to taste 1 can chopped tomatoes 2 tbsp tomato paste 3 onions, chopped 1 can chicken stock 1 to 2 cups chopped spinach 1/2 cup finely sliced carrots dash of Worcestershire sauce Olive Oil

    Preparation:

    Heat the oil in a pan and add all the vegetables, stir thoroughly, add the tomatoes, tomato paste, stock and Worcester sauce.  Cover and cook on low for 10 – 15 minutes.

    5. Quick and easy

    Ingredients:

    2 cups cabbage, shredded 1 cups leeks, chopped 1/2 cup carrots, diced 1/2 cup celery, diced 2 tsp butter 2 cloves garlic, crushed salt and pepper to taste vegetable stock to cover olive oil
